Ingredients
- 1.5 pounds pork shoulder or pork belly
- 3 tablespoons honey
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons Shaoxing wine or dry sherry
- 1 teaspoon five-spice powder
- 3 cloves garlic, minced
- 1 teaspoon sesame oil
- 1-2 drops red food coloring (optional, for traditional appearance)
Instructions
- In a mixing bowl, combine 2 tablespoons honey, hoisin sauce, soy sauce, oyster sauce, Shaoxing wine, five-spice powder, minced garlic, sesame oil, and red food coloring if using.
- Place the pork shoulder or belly in a shallow dish or a large zip-top bag. Pour the marinade over the pork, making sure it’s thoroughly coated. Cover and refrigerate for at least 3 hours, preferably overnight.
- Preheat your oven to 375°F (190°C). Line a baking tray with aluminum foil and place a wire rack on top. This prevents sticking and allows for even cooking.
- Remove the pork from the marinade, allowing excess to drip off. Save the marinade for basting.
- Place the pork on the wire rack. Bake in the preheated oven for 20 minutes. Meanwhile, transfer the leftover marinade to a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for 5 minutes.
- After the pork has baked for 20 minutes, baste it generously with the simmered marinade. Return to the oven and bake for another 15-20 minutes, basting once more halfway through.
- Remove the pork from the oven and brush with the remaining tablespoon of honey. This adds a beautiful glossy finish and extra sweetness.
- Set your oven to broil. Place the pork back in the oven for 3-5 minutes, watching closely to prevent burning. This step adds a slight char and intensified flavor for that authentic Char Siu look.
- Remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute, keeping the pork moist.
