Ingredients

  • 1.5 pounds pork shoulder or pork belly
  • 3 tablespoons honey
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons Shaoxing wine or dry sherry
  • 1 teaspoon five-spice powder
  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1-2 drops red food coloring (optional, for traditional appearance)

Instructions

  1. In a mixing bowl, combine 2 tablespoons honey, hoisin sauce, soy sauce, oyster sauce, Shaoxing wine, five-spice powder, minced garlic, sesame oil, and red food coloring if using.
  2. Place the pork shoulder or belly in a shallow dish or a large zip-top bag. Pour the marinade over the pork, making sure it’s thoroughly coated. Cover and refrigerate for at least 3 hours, preferably overnight.
  3. Preheat your oven to 375°F (190°C). Line a baking tray with aluminum foil and place a wire rack on top. This prevents sticking and allows for even cooking.
  4. Remove the pork from the marinade, allowing excess to drip off. Save the marinade for basting.
  5. Place the pork on the wire rack. Bake in the preheated oven for 20 minutes. Meanwhile, transfer the leftover marinade to a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for 5 minutes.
  6. After the pork has baked for 20 minutes, baste it generously with the simmered marinade. Return to the oven and bake for another 15-20 minutes, basting once more halfway through.
  7. Remove the pork from the oven and brush with the remaining tablespoon of honey. This adds a beautiful glossy finish and extra sweetness.
  8. Set your oven to broil. Place the pork back in the oven for 3-5 minutes, watching closely to prevent burning. This step adds a slight char and intensified flavor for that authentic Char Siu look.
  9. Remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute, keeping the pork moist.
