Ingredients

  • 2 whole sea bream (about 1.5 pounds each), cleaned and scaled
  • 2 lemons, sliced into rounds
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Set a baking dish aside that will comfortably hold both sea bream.
  2. Rinse the sea bream under cold running water and pat them dry with paper towels. Make sure they are thoroughly dried to help the skin crisp up while baking.
  3. Place the sea bream in the baking dish. Using a sharp knife, make diagonal slashes on each side of the fish to help the seasonings penetrate deeply. Be sure not to cut too deeply into the flesh.
  4. Season the fish inside and out with salt and black pepper.
  5. In a small bowl, mix the minced garlic, parsley, rosemary, thyme, and olive oil. Rub this mixture all over the fish, making sure to get some into the slashes you made.
  6. Stuff the cavity of each fish with a few lemon slices. You can also add any remaining slices to the baking dish around the fish to enhance the flavor.
  7. Cover the baking dish with aluminum foil to keep moisture in. Bake in the preheated oven for 15 minutes.
  8. Remove the foil and continue to bake for another 10 minutes, or until the fish flakes easily with a fork and the skin is crispy.
  9. Carefully remove the fish from the oven. Transfer them to a serving platter using a spatula for support.
  10. Garnish with additional fresh herbs if desired and serve with your choice of sides, such as steamed vegetables or a green salad.
