Ingredients
- 2 whole sea bream (about 1.5 pounds each), cleaned and scaled
- 2 lemons, sliced into rounds
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 400°F (200°C). Set a baking dish aside that will comfortably hold both sea bream.
- Rinse the sea bream under cold running water and pat them dry with paper towels. Make sure they are thoroughly dried to help the skin crisp up while baking.
- Place the sea bream in the baking dish. Using a sharp knife, make diagonal slashes on each side of the fish to help the seasonings penetrate deeply. Be sure not to cut too deeply into the flesh.
- Season the fish inside and out with salt and black pepper.
- In a small bowl, mix the minced garlic, parsley, rosemary, thyme, and olive oil. Rub this mixture all over the fish, making sure to get some into the slashes you made.
- Stuff the cavity of each fish with a few lemon slices. You can also add any remaining slices to the baking dish around the fish to enhance the flavor.
- Cover the baking dish with aluminum foil to keep moisture in. Bake in the preheated oven for 15 minutes.
- Remove the foil and continue to bake for another 10 minutes, or until the fish flakes easily with a fork and the skin is crispy.
- Carefully remove the fish from the oven. Transfer them to a serving platter using a spatula for support.
- Garnish with additional fresh herbs if desired and serve with your choice of sides, such as steamed vegetables or a green salad.
