Ingredients

  • 6 sausages (preferably pork or beef)
  • 2 pounds of potatoes, peeled and diced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon of freshly chopped parsley (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (approximately 200°C).
  2. Prepare a baking dish by lightly greasing it with a bit of olive oil to prevent sticking.
  3. In a large mixing bowl, combine the diced potatoes, sliced onion, olive oil, garlic powder, thyme, salt, and pepper. Toss everything together until the potatoes and onions are well-coated with the oil and seasonings. Using your hands to mix can be helpful here!
  4. Transfer the seasoned potato mixture to the prepared baking dish, spreading it out evenly.
  5. Place the sausages on top of the potato mixture, evenly spaced.
  6. Bake in the preheated oven for 45 minutes or until the potatoes are tender and the sausages are cooked through and browned. Halfway through baking, use a spatula to give the potatoes a gentle stir to ensure even cooking.
  7. For best results, check if the sausages are cooked by cutting into one. They should not be pink inside.
  8. Once done, remove from the oven. Let it cool for a few minutes, then optionally garnish with freshly chopped parsley.
  9. Tip: For an extra crispy finish on your potatoes, you can turn the oven to broil for the last 3-5 minutes of cooking. Keep a close eye to avoid burning.
