Ingredients
- 6 sausages (preferably pork or beef)
- 2 pounds of potatoes, peeled and diced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon of freshly chopped parsley (optional for garnish)
Instructions
- Preheat your oven to 400°F (approximately 200°C).
- Prepare a baking dish by lightly greasing it with a bit of olive oil to prevent sticking.
- In a large mixing bowl, combine the diced potatoes, sliced onion, olive oil, garlic powder, thyme, salt, and pepper. Toss everything together until the potatoes and onions are well-coated with the oil and seasonings. Using your hands to mix can be helpful here!
- Transfer the seasoned potato mixture to the prepared baking dish, spreading it out evenly.
- Place the sausages on top of the potato mixture, evenly spaced.
- Bake in the preheated oven for 45 minutes or until the potatoes are tender and the sausages are cooked through and browned. Halfway through baking, use a spatula to give the potatoes a gentle stir to ensure even cooking.
- For best results, check if the sausages are cooked by cutting into one. They should not be pink inside.
- Once done, remove from the oven. Let it cool for a few minutes, then optionally garnish with freshly chopped parsley.
- Tip: For an extra crispy finish on your potatoes, you can turn the oven to broil for the last 3-5 minutes of cooking. Keep a close eye to avoid burning.
