Ingredients
- 4 whole mackerel, gutted and cleaned
- 2 tablespoons olive oil
- 1 lemon, sliced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 sprig fresh rosemary
- 4 slices lemon, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the mackerel under cold water and pat them dry with paper towels. This helps the fish to cook evenly.
- Place the mackerel on a large baking sheet lined with aluminum foil or parchment paper for easy cleanup.
- Drizzle the olive oil over the fish. Use your hands or a brush to coat the fish evenly with the oil. A light coat is enough.
- Sprinkle the minced garlic, salt, and pepper over the fish, ensuring even distribution for a balanced flavor.
- Place a few slices of lemon and the rosemary sprig inside each fish’s cavity. This step infuses the fish with juicy citrus flavor.
- Tightly wrap the fish in foil to retain moisture and ensure even cooking.
- Bake the mackerel in the preheated oven for 20-25 minutes until the fish flakes easily with a fork.
- Remove from the oven and rest the fish for a few minutes before unwrapping, letting the juices settle back into the fish.
- Garnish each serving with a slice of lemon and a sprinkle of fresh parsley for added color and zing.
