  • 4 whole mackerel, gutted and cleaned
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 sprig fresh rosemary
  • 4 slices lemon, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the mackerel under cold water and pat them dry with paper towels. This helps the fish to cook evenly.
