Ingredients

  • 4 hake fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the hake fillets under cool water and pat them dry with paper towels. This helps ensure the fish cooks evenly and prevents it from becoming soggy.
  3. Drizzle olive oil over a baking sheet or a large baking dish to prevent sticking.
  4. Place the hake fillets on the baking sheet. Season them with salt and pepper.
  5. In a small bowl, combine the minced garlic, chopped parsley, and dried thyme. Sprinkle this mixture evenly over the fillets.
