Ingredients
- 4 fish fillets (such as cod or tilapia, about 6 oz each)
- 1.5 pounds potatoes, sliced thinly
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 lemon, sliced into rounds
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the potatoes into thin, even slices to ensure they cook evenly.
- Place the sliced potatoes in a large bowl. Add 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of garlic powder. Toss the potatoes well to coat them evenly.
- Arrange the potato slices in a single layer on a large baking sheet. Bake in the preheated oven for 20 minutes, turning halfway through to ensure even browning.
- While the potatoes are baking, prepare the fish. Rinse the fish fillets under cold water and pat them dry with paper towels.
- In a small bowl, combine the remaining olive oil, salt, pepper, oregano, and garlic powder. Brush this mixture over both sides of each fish fillet.
- Remove the potatoes from the oven and push them to the sides of the baking sheet. Place the fish fillets in the center of the baking sheet.
- Lay lemon slices over each fish fillet. This adds a nice citrus flavor and keeps the fish moist.
- Return the baking sheet to the oven and continue to bake for an additional 20 minutes, or until the fish is opaque and flakes easily with a fork. The potatoes should be golden and crispy by this time.
- Once done, remove from the oven and sprinkle fresh parsley over the fish and potatoes.
- Serve the baked fish with potatoes immediately, garnishing with additional lemon wedges if desired.
- Tip: For extra crispy potatoes, consider broiling them for an additional 2-3 minutes.
