- 2 cups elbow macaroni (uncooked)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 bell pepper (diced)
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 cup beef broth
- 1 tbsp paprika
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Shredded cheddar cheese (optional, for garnish)
Instructions
- Dice the onion, mince the garlic, and dice the bell pepper. Measure out all spices and canned ingredients. Tip: Prepping ingredients beforehand makes cooking smoother.
- Bring a large pot of salted water to a boil (212°F). Add macaroni and cook until al dente (about 7-8 minutes). Drain using a colander and set aside. Tip: Rinse pasta with cold water if not combining immediately to prevent sticking.
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it into crumbles with a wooden spoon (5-7 minutes). Drain excess fat.
- Add diced onion, garlic, and bell pepper to the skillet. Cook until softened (3-4 minutes).
- Stir in paprika, oregano, salt, and black pepper. Cook for 1 minute to toast the spices.
- Pour in diced tomatoes, tomato sauce, and beef broth. Bring to a simmer over medium heat. Reduce heat to low, cover, and cook for 10-15 minutes to meld flavors.
