Ingredients

  • 4 andouillettes sausages
  • 2 tablespoons olive oil
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 lemon, cut into wedges (for serving)
  • Salt, to taste

Instructions

  1. Preheat your grill to medium heat, around 375°F (190°C). If using a charcoal grill, ensure the coals are hot and ashed over.
  2. Take the andouillettes sausages out of the refrigerator and let them sit at room temperature for about 10 minutes to ensure even cooking.
  3. Drizzle the sausages with olive oil and sprinkle with freshly ground black pepper and a pinch of salt. Roll them in the oil mixture to coat evenly.
  4. Place the andouillettes on the grill directly over the heat. Grill for about 10-15 minutes, turning occasionally with tongs to ensure even cooking and to get a nice char on all sides.
  5. Check for doneness by ensuring an internal temperature of 160°F (71°C) is reached. If you don’t have a thermometer, make a small slit and check that the inside is hot and steaming.
  6. Remove the sausages from the grill, and let them rest for 5 minutes before serving. This allows the juices to redistribute within the sausages.
