Ingredients
- 4 andouillettes sausages
- 2 tablespoons olive oil
- 1 teaspoon freshly ground black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 lemon, cut into wedges (for serving)
- Salt, to taste
Instructions
- Preheat your grill to medium heat, around 375°F (190°C). If using a charcoal grill, ensure the coals are hot and ashed over.
- Take the andouillettes sausages out of the refrigerator and let them sit at room temperature for about 10 minutes to ensure even cooking.
- Drizzle the sausages with olive oil and sprinkle with freshly ground black pepper and a pinch of salt. Roll them in the oil mixture to coat evenly.
- Place the andouillettes on the grill directly over the heat. Grill for about 10-15 minutes, turning occasionally with tongs to ensure even cooking and to get a nice char on all sides.
- Check for doneness by ensuring an internal temperature of 160°F (71°C) is reached. If you don’t have a thermometer, make a small slit and check that the inside is hot and steaming.
- Remove the sausages from the grill, and let them rest for 5 minutes before serving. This allows the juices to redistribute within the sausages.
- Garnish with freshly chopped parsley and serve with lemon wedges on the side.
