- 3 large eggs

Instructions
- In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
- In a separate bowl, mix the ricotta cheese, eggs, and vanilla extract until smooth and well blended.
- Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula until a thick batter forms. Ensure no dry flour remains, but avoid over-mixing.
- Heat about 2 inches of vegetable oil in a large heavy-bottomed pot over medium heat until it reaches 375°F (190°C).
- Carefully drop rounded tablespoonfuls of batter into the hot oil, frying in batches to avoid overcrowding. Fry each zeppola for about 3-4 minutes, or until golden brown, turning them occasionally for even cooking.
