Ingredients
- 4 large eggs
- 1 cup whole milk
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 8 slices of stale bread or brioche
- 1/4 cup unsalted butter
- Vegetable oil for frying
- 1/4 cup honey or syrup, for serving
- Powdered sugar, for dusting (optional)
Instructions
- In a large mixing bowl, crack the eggs and beat them lightly with a whisk.
- Add milk, granulated sugar, vanilla extract, and cinnamon to the bowl, mixing well until the sugar is dissolved. This is your custard mixture.
- Lay the slices of bread in a shallow dish. Pour the custard mixture over the bread, allowing it to soak for at least 5 minutes per side. Make sure the bread is completely soaked. Tip: Use stale bread for better absorption and structure.
- Preheat your oven to 200°F and place a baking sheet inside. This will be used to keep cooked torrejas warm.
- In a large frying pan, heat the butter and a little vegetable oil over medium heat. The oil helps prevent the butter from burning.
- Once the butter is melted and sizzling, carefully add slices of the soaked bread to the pan. Cook in batches to avoid overcrowding.
- Cook the bread for about 3 to 4 minutes on each side, or until golden brown. Tip: Use a spatula to gently press the bread down while cooking for even browning.
- Transfer the cooked torrejas to the warm oven to keep them hot while you finish cooking the rest.
- Once all slices are cooked, serve the torrejas warm with honey or syrup. Optionally, dust with powdered sugar before serving.
