Ingredients
- 2 cups glutinous rice flour
- 1 cup granulated sugar
- 1 and 3/4 cups water
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: 1/4 cup sweetened red bean paste or fruit jam for filling
Instructions
- Preheat your oven to 350°F (175°C). This ensures that the cake will bake evenly once the mixture is ready.
- In a mixing bowl, combine 2 cups of glutinous rice flour and 1 cup of granulated sugar. Mix well until they are thoroughly combined.
- Gradually add 1 and 3/4 cups of water into the dry ingredients while stirring. Mixing slowly helps to avoid any lumps in the batter.
- Add 1 teaspoon of vanilla extract and a pinch of salt to the batter. Mix until the batter is smooth.
- If using an optional filling like sweetened red bean paste or fruit jam, spread a thin layer on the bottom of a greased 8×8 inch baking dish.
- Pour the batter evenly into the prepared baking dish. Ensure that it spreads out smoothly using a spatula.
- Place the baking dish in the preheated oven. Bake for 60 minutes or until the cake is firm and a toothpick inserted in the center comes out clean.
- Once baked, remove the dish from the oven and let it cool on a wire rack for at least 20 minutes before slicing. This allows the cake to set properly.
- Slice the cake into squares or desired shapes. Tip: You can use a plastic knife coated with a bit of oil to prevent sticking while slicing.
- Enjoy your sweet rice cake as a dessert or with tea. Store any leftovers in an airtight container to keep them soft and chewy.
