Ingredients
- 2 cups glutinous rice flour
- 1 1/2 cups water
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup sweet red bean paste
- 2 tablespoons toasted sesame seeds (for coating)
Instructions
- In a large mixing bowl, combine the glutinous rice flour, sugar, salt, and vanilla extract. Gradually add water while stirring continuously to form a smooth dough. It should be soft and slightly sticky.
- Divide the dough into 16 equal pieces. Roll each piece into a ball. Keep unused dough covered with a damp cloth to prevent it from drying out.
- Flatten each ball into a disk and place a small spoonful of sweet red bean paste in the center. Carefully wrap the dough around the filling and seal tightly by pinching the edges together. Roll gently to reshape into a ball.
- Boil a large pot of water. Once boiling, reduce heat slightly to maintain a gentle boil.
- Carefully drop the rice balls into the boiling water. Cook until they float to the surface, approximately 5-7 minutes.
- Using a slotted spoon, remove the rice balls and place them in a bowl of cold water for 1-2 minutes to stop the cooking process.
- Drain the rice balls and roll them in toasted sesame seeds to coat evenly. Serve warm.
