Ingredients
- 2 cups all-purpose flour
- 3 large eggs
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, softened
- Zest of 1 lemon
- Vegetable oil, for frying
- 1 cup honey
- Sprinkles, for garnish
Instructions
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Stir well using a whisk.
- Make a well in the center of the dry ingredients. Crack the eggs into the well and add the vanilla extract, softened butter, and lemon zest.
- Mix the ingredients together using your hands until a dough forms. If the dough is sticky, add a little more flour, one tablespoon at a time.
- Transfer the dough to a lightly floured surface. Knead it for about 5 minutes until smooth and elastic. Cover the dough with a kitchen towel and let it rest for 30 minutes.
- Divide the rested dough into four equal parts. Roll each part into a long rope about 1/2 inch in diameter.
- Cut each rope into small pieces, about the size of a hazelnut. Roll each piece into a small ball.
- Heat about 2 inches of vegetable oil in a deep frying pan to 350°F. Carefully add a few dough balls at a time to the hot oil. Fry until golden brown, about 3-4 minutes per batch. Use a slotted spoon to remove them and drain on paper towels.
- In a saucepan, warm the honey over low heat until it becomes thin and pourable. Add the fried balls and stir gently to coat them evenly in the honey.
- Pile the honey-coated balls onto a serving plate. Add sprinkles on top for garnish. Allow to cool before serving.
