Ingredients
- 1 cup (160 g) sweet rice flour (glutinous rice flour)
- 3/4 cup (180 ml) water
- 1/4 cup (50 g) granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (50 g) toasted black sesame seeds
- Cornstarch or potato starch, for dusting
Instructions
- In a medium microwave-safe bowl, whisk together sweet rice flour, granulated sugar, and salt. Gradually add water while stirring continuously to form a smooth batter.
- Cover the bowl loosely with a microwave-safe plate or plastic wrap. Microwave the mixture on high for 2 minutes.
- Remove the bowl carefully from the microwave – it will be hot! Stir the mochi mixture with a spatula. If it’s not clear and fully translucent, microwave for an additional 30 seconds.
- Once the mochi is ready, cover your hands and a clean surface lightly with cornstarch. This prevents sticking.
- Using a spoon, scoop a small portion of the mochi (about 1.5 tablespoons) and roll it into a ball between your hands. Be cautious as the mixture might still be warm. Repeat until all the dough is used.
- Place the toasted sesame seeds on a shallow plate. Roll each mochi ball in the sesame seeds to coat it evenly.
- Tips: If you have a fine mesh strainer, you can sift the cornstarch over your working area and hands for a more even dusting. Ensure sesame seeds are well-toasted for extra flavor; toast in a dry pan over medium heat if needed.
