  • 1 cup powdered sugar, divided

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened butter and 1/2 cup of powdered sugar. Use an electric mixer to cream them together until light and fluffy. This should take about 2 to 3 minutes.
  3. Add the vanilla extract to the creamed mixture and mix well until combined.
  4. In another bowl, combine the flour, ground almonds, and salt. Gradually add the dry ingredients to the butter mixture in batches, mixing on low speed until just blended after each addition.
  5. Form the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, about 2 inches apart. Slightly flatten each ball with the palm of your hand.
