Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup powdered sugar, divided
- 1/4 cup ground almonds
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened butter and 1/2 cup of powdered sugar. Use an electric mixer to cream them together until light and fluffy. This should take about 2 to 3 minutes.
- Add the vanilla extract to the creamed mixture and mix well until combined.
- In another bowl, combine the flour, ground almonds, and salt. Gradually add the dry ingredients to the butter mixture in batches, mixing on low speed until just blended after each addition.
- Form the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, about 2 inches apart. Slightly flatten each ball with the palm of your hand.
- Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden. Avoid overbaking to keep them soft and crumbly.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack. Once completely cooled, sift the remaining 1/2 cup of powdered sugar over the cookies.
