Ingredients

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 1 cup (240ml) fresh lemon juice (about 4 lemons)
  • 1 tablespoon lemon zest
  • 1 pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine the sugar and water. Stir constantly to ensure the sugar dissolves completely.
  2. Bring the mixture to a gentle boil, then remove it from the heat. Allow it to cool to room temperature. This is your simple syrup.
  3. Once cooled, add the fresh lemon juice, lemon zest, and a pinch of salt to the syrup, stirring well to combine.
  4. Pour the lemon mixture into a shallow metal or glass baking dish.
  5. Place the dish in the freezer. Stir the mixture every 30 minutes with a fork to break up ice crystals, for about 3 hours.
