Ingredients
- 1 cup (200g) granulated sugar
- 1 cup (240ml) water
- 1 cup (240ml) fresh lemon juice (about 4 lemons)
- 1 tablespoon lemon zest
- 1 pinch of salt
Instructions
- In a small saucepan over medium heat, combine the sugar and water. Stir constantly to ensure the sugar dissolves completely.
- Bring the mixture to a gentle boil, then remove it from the heat. Allow it to cool to room temperature. This is your simple syrup.
- Once cooled, add the fresh lemon juice, lemon zest, and a pinch of salt to the syrup, stirring well to combine.
- Pour the lemon mixture into a shallow metal or glass baking dish.
- Place the dish in the freezer. Stir the mixture every 30 minutes with a fork to break up ice crystals, for about 3 hours.
