Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Additional 1/4 cup granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  3. In a separate large mixing bowl, beat together the softened butter and 3/4 cup of granulated sugar until light and fluffy. This should take about 2 minutes. Use an electric mixer or whisk.
  4. Add the egg and vanilla extract to the butter and sugar mixture. Beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over-mix, as this can make the cookies tough.
  6. Scoop out tablespoon-sized amounts of dough and roll them into balls. Roll each ball in the additional 1/4 cup of granulated sugar to coat.
  7. Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers should remain soft and chewy.
