Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Additional 1/4 cup granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
- In a separate large mixing bowl, beat together the softened butter and 3/4 cup of granulated sugar until light and fluffy. This should take about 2 minutes. Use an electric mixer or whisk.
- Add the egg and vanilla extract to the butter and sugar mixture. Beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over-mix, as this can make the cookies tough.
- Scoop out tablespoon-sized amounts of dough and roll them into balls. Roll each ball in the additional 1/4 cup of granulated sugar to coat.
