Ingredients

  • 1 cup ricotta cheese
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a medium bowl, combine ricotta cheese, honey, and vanilla extract. Mix until smooth.
  2. Add the egg to the ricotta mixture and mix well until the egg is fully incorporated.
  3. Sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the ricotta mixture, stirring until just combined. Do not overmix.
  4. In a deep skillet, heat about 2 inches of vegetable oil to 350°F. Use a thermometer to ensure the correct temperature. If the oil is too hot, the fritters will brown quickly on the outside but remain uncooked inside.
  5. Carefully drop tablespoons of batter into the hot oil, cooking in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown. Tip: Use a slotted spoon to turn the fritters gently.
  6. Remove the fritters with a slotted spoon and drain on a plate lined with paper towels to remove excess oil.
  7. Once all fritters are cooked, dust them with powdered sugar before serving. Serve warm for the best experience.
