Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 2 large eggs
- 2 tablespoons milk
- 1 cup ricotta cheese
- 1/4 cup powdered sugar
- 1/2 cup mini chocolate chips
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, mix together the flour, granulated sugar, and salt. Add the chilled butter cubes and use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
- In a small bowl, beat 1 egg and the milk together. Add this to the flour mixture and mix until it forms a dough. If the dough is too dry, add a teaspoon of milk at a time until the dough comes together. Divide the dough into two pieces, wrap in plastic wrap, and refrigerate for 30 minutes.
- While the dough is chilling, prepare the filling. In a medium bowl, mix together the ricotta cheese, powdered sugar, mini chocolate chips, and vanilla extract. Cover and refrigerate until ready to use.
- Once the dough has chilled, roll out one piece on a lightly floured surface to about 1/8 inch thickness. Use a round cookie cutter to cut out circles about 3 inches in diameter.
- Place a teaspoon of the ricotta mixture in the center of each circle. Beat the remaining egg and brush the edges of the circles with it. Fold each circle in half to form a half-moon shape and press the edges with a fork to seal them.
- Heat about 2 inches of vegetable oil in a deep skillet over medium heat until it reaches 350°F. You can use a kitchen thermometer to check the temperature.
- Carefully lower a few raviolis into the hot oil. Fry each side for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them from the oil and place on a paper towel-lined tray to drain excess oil.
- Repeat with remaining raviolis. Once done, dust with powdered sugar before serving. Tip: To ensure even frying, don’t overcrowd the pan and keep the oil temperature consistent.
