Ingredients
- 1 cup granulated sugar
- 1 can (14 ounces) sweetened condensed milk
- 1 can (12 ounces) evaporated milk
- 4 large eggs
- 1 tablespoon vanilla extract
- 4 ounces cream cheese
Instructions
- In a medium saucepan over medium heat, carefully melt 1 cup of sugar. As the sugar melts and becomes golden brown, tilt the saucepan to achieve an even caramel. Do not stir and be cautious as it can burn quickly.
- Immediately pour the caramel into a 9-inch round baking dish, quickly tilting to evenly coat the bottom. Allow it to harden and set aside.
- In a blender, combine sweetened condensed milk, evaporated milk, eggs, vanilla extract, and cream cheese. Blend until smooth, scraping down the sides as necessary.
- Pour the milk mixture into the caramel-lined baking dish, smoothing out the top with a spatula.
- Preheat your oven to 350°F (175°C). Place the baking dish into a larger, deep baking pan. Fill the larger pan with hot water halfway up the sides of the flan dish. This water bath will help prevent the flan from cracking.
- Carefully place the pan in the oven. Bake for 50-60 minutes, or until the center of the flan is set but still jiggles slightly when gently shaken. Check frequently to avoid overcooking.
- Remove the flan from the oven and water bath. Let it cool completely at room temperature, then chill in the refrigerator for at least 4 hours or overnight.
- To serve, run a knife around the edges of the flan to loosen it. Place a serving plate on top, invert the dish quickly, and gently lift to release the flan. The caramel will flow over the top as a delicious sauce.
