Ingredients

  • 2 cups granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 teaspoon white vinegar
  • 1/2 cup water
  • 1/2 cup roasted peanuts, finely chopped
  • 1/2 cup desiccated coconut

Instructions

  1. Prepare a baking sheet by greasing it lightly with butter or spraying with non-stick spray to prevent sticking.
  2. In a heavy-bottomed saucepan, combine the sugar, corn syrup, white vinegar, and water. Stir gently to combine.
  3. Attach a candy thermometer to the saucepan. Heat the mixture over medium heat without stirring until it reaches 266°F (130°C). This will take about 10-15 minutes.
  4. Once the mixture reaches the desired temperature, remove it from the heat. Pour it onto the prepared baking sheet. Let it cool until it is warm to the touch but pliable.
  5. Once the candy is cool enough to handle, use your hands to gently stretch the candy into a long loop. Twist and fold it back onto itself, doubling the strands.
  6. Repeat the twisting and folding process, pulling the strands thinner and thinner until you achieve fine threads.
  7. Cut the threads into pieces about the length of your hand. For each piece, fold it with a spoonful of chopped peanuts and desiccated coconut in the center.
  8. Wrap the threads around the filling completely. The candy should form a neat bundle.
  9. Arrange the finished Dragon Beard Candy on a plate. Serve immediately or store in an airtight container for up to 2 days.
