- In a medium saucepan, combine the water, butter, 1 tablespoon of sugar, and salt. Place it over medium heat and stir the mixture until the butter is melted.
- Once the butter is melted and the mixture begins to boil, remove it from the heat and stir in the flour all at once with a wooden spoon until a smooth dough forms.
- Let the dough cool for a few minutes before adding the eggs. This step is important to ensure the eggs don’t cook when mixed in.
- Add the eggs one at a time to the dough, mixing well after each addition until you have a smooth, glossy dough.
- Transfer the dough to a piping bag fitted with a large star tip.
- In a deep frying pan or heavy-bottomed pot, heat the vegetable oil to 375°F (190°C).
- Carefully pipe 6-inch lengths of dough into the hot oil, using scissors to cut the dough from the piping bag. Fry the churros, turning them occasionally, until they are golden brown and crisp, about 2-3 minutes per side.
- Remove the churros from the oil using a slotted spoon and drain on paper towels.
- In a shallow dish, combine the 1/2 cup sugar and cinnamon. Roll the warm churros in the cinnamon sugar mixture to coat.
- Serve the churros immediately with your favorite dipping sauce, such as chocolate, if desired.
