Ingredients

  • 7 oz (200g) dark chocolate
  • 2/3 cup (150g) unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (120g) chopped nuts (such as walnuts or hazelnuts)
  • 7 oz (200g) tea biscuits or digestive cookies, broken into small pieces
  • Optional: 1/3 cup (40g) powdered sugar for dusting

Instructions

  1. Place a medium saucepan over low heat. Add the dark chocolate and butter, stirring gently until both are fully melted and combined. Be sure to stir constantly to prevent burning. Stir in the sugar and continue to mix until dissolved. Remove from heat and let cool slightly.
  2. In a separate bowl, beat the eggs and vanilla extract until they are well combined. Slowly add the egg mixture to the chocolate mixture, stirring constantly until smooth. The chocolate mixture should not be too hot, to prevent cooking the eggs.
  3. Add the chopped nuts and broken biscuits to the mixture. Stir everything together until the nuts and biscuits are evenly coated with chocolate.
  4. Lay out a large sheet of plastic wrap or parchment paper on a flat surface. Spoon the chocolate mixture onto the center of the wrap, shaping it into a rough log form.
  5. Wrap the mixture in the plastic wrap, shaping and rolling it into a condensed cylinder, mimicking the shape of a salami. Twist the ends of the wrap to seal it tightly.
  6. Place the wrapped chocolate salami in the refrigerator for at least 4 hours, or until it is firm and set. For best results, allow it to chill overnight.
  7. Once firm, remove the plastic wrap from the chocolate salami. If desired, roll the salami in powdered sugar to give it an authentic ‘salami’ appearance.
