- In a large bowl, mix together chestnut flour, all-purpose flour, baking powder, salt, sugar, and cinnamon. Whisk until well combined. In another bowl, mix together milk, beaten egg, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, whisking until smooth. The batter should be thick but pourable. If too thick, add a bit more milk.
- In a deep skillet or pot, pour enough vegetable oil to cover about 2 inches and heat over medium-high heat to 350°F (175°C). To test the heat, drop a small bit of batter into the oil; it should sizzle and rise to the top slowly.
- Using a tablespoon or small ice cream scoop, gently drop small dollops of batter into the hot oil, ensuring not to crowd the pan. Fry each side for about 3-4 minutes or until golden brown. Use a slotted spoon to transfer the fritters onto a plate lined with paper towels to drain excess oil.
