Ingredients

  • For the pastry:
  • 1 1/4 cups (150g) all-purpose flour
  • 1/4 cup (50g) sugar
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tablespoons (30ml) ice water
  • For the filling:
  • 2 cups (480ml) blackcurrants (fresh or frozen)
  • 1/2 cup (100g) sugar
  • 1/4 cup (60ml) water
  • 1 tablespoon (15ml) cornstarch
  • 1 tablespoon (15ml) lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour and sugar for the pastry. Add the cold butter and rub it into the flour mixture until it resembles coarse crumbs.
  3. Add the egg yolk and ice water. Mix until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a floured surface and line a tart pan with it. Trim the edges and prick the bottom with a fork. Bake for 15 minutes, or until lightly golden. Let it cool.
  5. For the filling, combine the blackcurrants, sugar, water, cornstarch, and lemon juice in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.
  6. Pour the blackcurrant filling into the cooled tart shell. Smooth the top with a spatula.
  7. Bake the tart for 20-25 minutes, or until the filling is set. Let it cool before serving.
  8. Tip: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
