Ingredients
- For the pastry:
- 1 1/4 cups (150g) all-purpose flour
- 1/4 cup (50g) sugar
- 1/2 cup (115g) unsalted butter, cold and cubed
- 1 egg yolk
- 2 tablespoons (30ml) ice water
- For the filling:
- 2 cups (480ml) blackcurrants (fresh or frozen)
- 1/2 cup (100g) sugar
- 1/4 cup (60ml) water
- 1 tablespoon (15ml) cornstarch
- 1 tablespoon (15ml) lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the flour and sugar for the pastry. Add the cold butter and rub it into the flour mixture until it resembles coarse crumbs.
- Add the egg yolk and ice water. Mix until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface and line a tart pan with it. Trim the edges and prick the bottom with a fork. Bake for 15 minutes, or until lightly golden. Let it cool.
- For the filling, combine the blackcurrants, sugar, water, cornstarch, and lemon juice in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.
- Pour the blackcurrant filling into the cooled tart shell. Smooth the top with a spatula.
- Bake the tart for 20-25 minutes, or until the filling is set. Let it cool before serving.
- Tip: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
