Ingredients

  • 2 cups (480ml) blackcurrants (fresh or frozen)
  • 1/2 cup (120ml) sugar
  • 1/2 cup (120ml) water
  • 1 tablespoon (15ml) lemon juice
  • Crème de Cassis (optional, for serving)

Instructions

  1. In a saucepan, combine the sugar and water. Heat over medium heat until the sugar dissolves completely. Let the syrup cool.
  2. In a blender or food processor, combine the blackcurrants, cooled sugar syrup, and lemon juice. Blend until smooth.
  3. Strain the mixture through a fine-mesh sieve to remove any seeds or pulp.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. Alternatively, pour the mixture into a freezer-safe container and freeze, stirring every 30 minutes until firm.
  5. Serve the sorbet in chilled bowls or cones. Optionally, drizzle with Crème de Cassis for an extra touch of flavor.
  6. Tip: Garnish with fresh mint leaves or a drizzle of blackcurrant syrup for an extra touch of elegance.
