Ingredients

  • 1 loaf of stale bolillo bread, sliced
  • 1 cup piloncillo or brown sugar
  • 1 1/2 cups water
  • 1 cinnamon stick
  • 2 cloves
  • 1/2 cup raisins
  • 1/2 cup chopped pecans or almonds
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup butter, melted
  • 1/2 cup dried apricots, chopped (optional)
  • 1/4 cup shredded coconut (optional)
  • 1 1/2 cups of shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the sliced bolillo bread on a baking sheet. Toast in the preheated oven for about 10 minutes, turning once halfway, until lightly crispy. This step prevents the bread from becoming too soggy.
  3. In a medium saucepan, combine the piloncillo (or brown sugar), water, cinnamon stick, and cloves. Bring to a boil over medium heat, stirring occasionally, until the sugar dissolves. Let it simmer for about 5 minutes to infuse the syrup with spice flavors. Turn off the heat and set aside.
  4. In a large baking dish, arrange a layer of toasted bread slices. Drizzle a portion of the melted butter over the bread.
  5. Sprinkle some of the raisins, nuts, and cheese over the bread. You can also add dried apricots and coconut if using for extra flavor and texture.
  6. Repeat the layering process with the remaining bread slices, melted butter, raisins, nuts, and cheese until all ingredients are used.
  7. Carefully pour the sugar syrup over the entire bread mixture, allowing it to soak into the layers. Use a spoon to press down gently on the bread to help it absorb the liquid better.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and bake for an additional 5 minutes, or until the top is lightly golden and the cheese is melted.
  10. Let the capirotada cool for a few minutes before serving. This allows the flavors to meld beautifully.
  11. Serve warm or at room temperature. Enjoy your capirotada as is, or with a scoop of vanilla ice cream for an extra treat!
