Ingredients
- 1 loaf of stale bolillo bread, sliced
- 1 cup piloncillo or brown sugar
- 1 1/2 cups water
- 1 cinnamon stick
- 2 cloves
- 1/2 cup raisins
- 1/2 cup chopped pecans or almonds
- 1/2 cup shredded cheddar cheese
- 1/4 cup butter, melted
- 1/2 cup dried apricots, chopped (optional)
- 1/4 cup shredded coconut (optional)
- 1 1/2 cups of shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Place the sliced bolillo bread on a baking sheet. Toast in the preheated oven for about 10 minutes, turning once halfway, until lightly crispy. This step prevents the bread from becoming too soggy.
- In a medium saucepan, combine the piloncillo (or brown sugar), water, cinnamon stick, and cloves. Bring to a boil over medium heat, stirring occasionally, until the sugar dissolves. Let it simmer for about 5 minutes to infuse the syrup with spice flavors. Turn off the heat and set aside.
- In a large baking dish, arrange a layer of toasted bread slices. Drizzle a portion of the melted butter over the bread.
- Sprinkle some of the raisins, nuts, and cheese over the bread. You can also add dried apricots and coconut if using for extra flavor and texture.
- Repeat the layering process with the remaining bread slices, melted butter, raisins, nuts, and cheese until all ingredients are used.
- Carefully pour the sugar syrup over the entire bread mixture, allowing it to soak into the layers. Use a spoon to press down gently on the bread to help it absorb the liquid better.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5 minutes, or until the top is lightly golden and the cheese is melted.
- Let the capirotada cool for a few minutes before serving. This allows the flavors to meld beautifully.
