Ingredients
- For the crust:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- 1 tsp salt
- 1 tbsp granulated sugar
- 6-8 tbsp ice water
- For the filling:
- 6-7 medium apples (peeled, cored, thinly sliced)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 2 tbsp all-purpose flour (or cornstarch)
- For assembly:
- 1 egg (beaten, for egg wash)
- 1 tbsp coarse sugar (optional)
Instructions
- Make the crust: In a large bowl, mix flour, salt, and sugar. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs. Add ice water 1 tbsp at a time, mixing until dough just comes together. Divide into two balls, flatten into discs, wrap in plastic, and chill for 30 minutes.
- Prep the filling: Toss apple slices with lemon juice, sugars, cinnamon, nutmeg, and flour until evenly coated. Let sit for 15 minutes to release juices.
- Roll the dough: On a floured surface, roll one dough disc into a 12-inch circle. Carefully transfer to a 9-inch pie dish. Trim edges, leaving a 1-inch overhang.
- Assemble: Pour filling into the crust. Roll out the second dough disc and place over apples. Crimp edges to seal. Cut 4-5 slits in the top crust to vent. Brush with beaten egg and sprinkle coarse sugar.
- Bake: Preheat oven to 375°F. Place pie on a baking sheet (to catch drips). Bake 45-50 minutes until crust is golden and filling bubbles. Cool 2 hours before slicing.
