Ingredients

  • 2 medium Granny Smith apples (peeled and diced)
  • 1.5 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 cups vegetable oil (for frying)
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Make batter: In large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  2. Add wet ingredients: In separate bowl, whisk milk, egg, and vanilla. Pour into dry ingredients. Mix until just combined (small lumps are OK).
  3. Fold apples: Gently stir diced apples into batter until evenly coated. Let rest 5 minutes while heating oil.
  4. Heat oil: Pour oil into heavy pot or deep fryer. Attach thermometer. Heat to 375°F (190°C). Maintain temperature throughout frying.
  5. Fry fritters: Using 2 tablespoons, carefully drop 1.5″ mounds of batter into oil. Fry 3-4 at a time (don’t crowd). Cook 2-3 minutes per side until golden brown.
  6. Drain: Remove fritters with slotted spoon. Drain on paper towels for 2 minutes per side.
  7. Serve: Dust generously with powdered sugar using fine mesh strainer. Best served warm.
