Ingredients
- 2 medium Granny Smith apples (peeled and diced)
- 1.5 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup whole milk
- 1 large egg
- 1 tsp vanilla extract
- 4 cups vegetable oil (for frying)
- 1/2 cup powdered sugar (for dusting)
Instructions
- Make batter: In large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
- Add wet ingredients: In separate bowl, whisk milk, egg, and vanilla. Pour into dry ingredients. Mix until just combined (small lumps are OK).
- Fold apples: Gently stir diced apples into batter until evenly coated. Let rest 5 minutes while heating oil.
- Heat oil: Pour oil into heavy pot or deep fryer. Attach thermometer. Heat to 375°F (190°C). Maintain temperature throughout frying.
- Fry fritters: Using 2 tablespoons, carefully drop 1.5″ mounds of batter into oil. Fry 3-4 at a time (don’t crowd). Cook 2-3 minutes per side until golden brown.
- Drain: Remove fritters with slotted spoon. Drain on paper towels for 2 minutes per side.
- Serve: Dust generously with powdered sugar using fine mesh strainer. Best served warm.
