Ingredients
- 2 cups almond milk
- 1/2 cup water
- 1/3 cup granulated sugar
- 1 teaspoon almond extract
- A pinch of salt
- 1/4 cup sliced almonds (optional, for garnish)
Instructions
- In a small saucepan, combine 1/2 cup of water and 1/3 cup of granulated sugar. Heat gently over medium heat, stirring constantly until the sugar is completely dissolved and the liquid is clear. This will take about 3-5 minutes.
- Remove the saucepan from heat and let the sugar syrup cool for about 10 minutes.
- In a medium bowl, mix together 2 cups of almond milk, the cooled sugar syrup, 1 teaspoon of almond extract, and a pinch of salt. Stir well to combine.
- Pour the mixture into a shallow baking dish or pan so that the liquid is in an even, thin layer. Place the dish in the freezer.
- After 30 minutes, check the mixture. Use a fork to scrape and stir the frozen edges into the center. Return to the freezer.
- Continue to scrape the mixture every 30 minutes for about 3 hours, or until the granita is completely frozen and has a light, flaky texture.
- Once fully frozen, divide the almond granita into serving dishes. If desired, top with sliced almonds for extra crunch and flavor.
