Ingredients

  • 2 medium zucchini, grated
  • 1 teaspoon salt
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon baking powder
  • 2 tablespoons chopped fresh parsley
  • Olive oil, for frying

Instructions

  1. Grate the zucchini using a box grater. Place the grated zucchini in a colander, sprinkle with salt, and allow it to sit for 10 minutes to draw out excess moisture. Rinse and squeeze dry using a clean kitchen towel to remove all remaining water.
  2. In a large mixing bowl, beat the eggs until well combined. Add the flour, Parmesan cheese, garlic, pepper, baking powder, and chopped parsley. Mix until a thick batter forms.
  3. Fold the drained zucchini into the batter, ensuring it is evenly distributed.
  4. Heat approximately 2 tablespoons of olive oil in a large skillet over medium heat (375°F). Carefully drop spoonfuls of the mixture into the hot oil, flattening slightly with the back of a spoon. Fry for about 3-4 minutes on each side, or until golden brown and crisp.
  5. Remove the cooked fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot, garnished with more fresh parsley if desired.
