- 2 medium zucchini, grated
- 1 teaspoon salt
- 2 large eggs
- 1/3 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon baking powder
- 2 tablespoons chopped fresh parsley
- Olive oil, for frying
Instructions
- Grate the zucchini using a box grater. Place the grated zucchini in a colander, sprinkle with salt, and allow it to sit for 10 minutes to draw out excess moisture. Rinse and squeeze dry using a clean kitchen towel to remove all remaining water.
- In a large mixing bowl, beat the eggs until well combined. Add the flour, Parmesan cheese, garlic, pepper, baking powder, and chopped parsley. Mix until a thick batter forms.
- Fold the drained zucchini into the batter, ensuring it is evenly distributed.
- Heat approximately 2 tablespoons of olive oil in a large skillet over medium heat (375°F). Carefully drop spoonfuls of the mixture into the hot oil, flattening slightly with the back of a spoon. Fry for about 3-4 minutes on each side, or until golden brown and crisp.
