Ingredients

  • 2 cups cooked jasmine rice, preferably day-old
  • 2 tablespoons vegetable oil
  • 1/2 cup cooked shrimp
  • 1/2 cup diced cooked chicken
  • 1/2 cup diced cooked ham
  • 2 large eggs, beaten
  • 1/3 cup frozen peas, thawed
  • 1/3 cup diced carrots
  • 3 green onions, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Ensure all your ingredients are prepped and within reach before you begin. This is key for executing a seamless stir-fry.
  2. Add the beaten eggs, scrambling them until fully cooked. Remove the scrambled eggs from the skillet and set aside. A non-stick spatula works best for this.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Increase the heat slightly and add shrimp, chicken, and ham. Stir-fry for about 2 minutes until heated through.
  4. Introduce the diced carrots to the skillet. Stir-fry for another 2-3 minutes until they begin to soften.
  5. Add the day-old jasmine rice, breaking up any clumps with the back of your spatula. Day-old rice absorbs flavors better, resulting in more flavorful fried rice.
  6. Return the scrambled eggs to the skillet. Add the peas and green onions, stir-frying for an additional 1-2 minutes.
  7. Pour in the soy sauce and oyster sauce, stirring well to ensure the rice is evenly coated. Season with salt and pepper to taste. The sauces should integrate with the rice, coloring it lightly.
  8. Finish with a drizzle of sesame oil for a burst of flavor, and give everything a final stir. Taste and adjust the seasonings if necessary.
  9. Transfer the Yangzhou Fried Rice to a serving dish and enjoy it warm. If you like, garnish with additional sliced green onions for extra freshness.
