Ingredients
- 8 oz ground pork
- 4 oz shrimp, peeled and deveined, chopped
- 2 green onions, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon rice wine or dry sherry
- 1 teaspoon sesame oil
- 1 teaspoon fresh ginger, grated
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 30 wonton wrappers
- 6 cups chicken broth
- 4 slices fresh ginger
- 2 tablespoons soy sauce
- 2 green onions, sliced
- A handful of baby spinach, optional
- 1/4 teaspoon white pepper, or to taste
Instructions
- In a large mixing bowl, combine ground pork, chopped shrimp, finely chopped green onions, 1 tablespoon soy sauce, rice wine, sesame oil, 1 teaspoon grated ginger, minced garlic, and 1/4 teaspoon salt. Mix well until the ingredients are thoroughly combined.
- Lay a wonton wrapper on a clean, flat surface. Place approximately 1 teaspoon of the filling mixture in the center of the wrapper. Moisten the edges of the wrapper with a little water using your finger.
- Fold the wrapper in half to form a triangle, pressing the edges down firmly to seal. Make sure there are no air bubbles. Then, bring the two opposite corners together over the center of the filling, overlap slightly and pinch to seal. Repeat with remaining wrappers and filling.
- In a large pot, bring the chicken broth to a simmer over medium-high heat. Add the sliced ginger and soy sauce, and adjust the heat to maintain a gentle simmer.
- Carefully add the wontons one by one into the simmering broth. Cook for 4 to 5 minutes or until the wontons float to the top and are cooked through.
- Add the sliced green onions and baby spinach, if using, to the pot. Simmer for an additional minute.
- Season the soup with white pepper to taste. Remove the ginger slices before serving for a milder ginger flavor.
- Ladle soup into bowls, ensuring each is garnished with green onions. Serve hot.
