Ingredients
- 4 large tlayuda tortillas or flour tortillas
- 1 1/2 cups refried black beans
- 1/4 cup lard or vegetable oil
- 2 cups shredded Oaxaca cheese or mozzarella
- 2 avocados, sliced
- 1 cup shredded iceberg lettuce
- 1/2 cup crumbled queso fresco
- 1 cup sliced tomatoes
- 1/2 cup pickled red onions
- 1/4 cup fresh cilantro leaves
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) for preparing the tlayudas.
- Place each tortilla on a baking sheet. If your oven is large enough, you can warm all four at once on different racks.
- Evenly spread a layer of refried black beans onto each tortilla. Use the back of a spoon to spread them smoothly.
- Sprinkle the shredded Oaxaca cheese generously over the beans.
- Place the baking sheets with the tortillas in the preheated oven. Bake for about 10 minutes, or until the cheese has melted and the tortillas are slightly crispy.
- Remove from the oven and transfer the tlayudas to a cutting board. Immediately top with sliced avocados, shredded lettuce, sliced tomatoes, crumbled queso fresco, pickled onions, and fresh cilantro.
- Season to taste with salt and pepper. Serve with lime wedges on the side for added zest.
