Ingredients

  • 4 large tlayuda tortillas or flour tortillas
  • 1 1/2 cups refried black beans
  • 1/4 cup lard or vegetable oil
  • 2 cups shredded Oaxaca cheese or mozzarella
  • 2 avocados, sliced
  • 1 cup shredded iceberg lettuce
  • 1/2 cup crumbled queso fresco
  • 1 cup sliced tomatoes
  • 1/2 cup pickled red onions
  • 1/4 cup fresh cilantro leaves
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) for preparing the tlayudas.
  2. Place each tortilla on a baking sheet. If your oven is large enough, you can warm all four at once on different racks.
  3. Evenly spread a layer of refried black beans onto each tortilla. Use the back of a spoon to spread them smoothly.
  4. Sprinkle the shredded Oaxaca cheese generously over the beans.
  5. Place the baking sheets with the tortillas in the preheated oven. Bake for about 10 minutes, or until the cheese has melted and the tortillas are slightly crispy.
  6. Remove from the oven and transfer the tlayudas to a cutting board. Immediately top with sliced avocados, shredded lettuce, sliced tomatoes, crumbled queso fresco, pickled onions, and fresh cilantro.
  7. Season to taste with salt and pepper. Serve with lime wedges on the side for added zest.
