Ingredients
- 8 fresh sea urchins
- 1 cup bread crumbs
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped chives
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 4 lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C). Grease a baking dish with a little olive oil to prevent sticking.
- Carefully cut an opening in the top of each sea urchin using kitchen scissors. Don’t forget to wear gloves to protect your hands from the spines. Use a spoon to gently scoop out the insides, being sure to retain the shells for stuffing.
- In a mixing bowl, combine the sea urchin insides, bread crumbs, parsley, chives, minced garlic, lemon zest, lemon juice, olive oil, salt, and pepper. Mix everything until thoroughly combined. The mixture should have a moist but crumbly texture.
- Spoon the mixture back into the hollowed sea urchin shells, packing it gently to ensure it’s filled but not overflowing.
- Place the stuffed sea urchins in the prepared baking dish. It’s a good idea to use crumpled foil to help stabilize and keep the sea urchins upright during baking.
- Bake the sea urchins in the preheated oven for 12-15 minutes or until the tops are golden brown. Keep an eye on them to prevent burning.
- Once baked, remove the sea urchins from the oven and let cool slightly. Serve with lemon wedges on the side for an extra fresh kick.
