Ingredients
- 8 fresh sardines, cleaned
- 1 cup breadcrumbs
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 lemon, cut into wedges for serving
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for an easy cleanup.
- In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the breadcrumbs and toast them until golden brown, about 3-4 minutes. Stir constantly to avoid burning.
- In a bowl, combine toasted breadcrumbs, parsley, minced garlic, lemon zest, salt, and pepper. Mix well to create the stuffing mixture.
- Place each sardine on a cutting board. Gently open them like a book, laying them skin-side down. Spoon about 1 tablespoon of the stuffing mixture into each sardine.
- Carefully fold the sardines back together. Transfer them to the prepared baking sheet, arranging them in a single layer.
- Brush the stuffed sardines with the remaining 1 tablespoon of olive oil. This will help them to crisp up nicely in the oven.
