Ingredients

  • 12 large white or cremini mushrooms
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • Non-stick cooking spray for the baking sheet

Instructions

  1. Preheat your oven to 375°F (190°C). This ensures that the oven will be hot and ready once your mushrooms are prepared.
  2. Gently clean the mushrooms with a damp paper towel. Remove the stems from the mushrooms and chop the stems finely. Set the mushroom caps aside on a plate.
  3. Heat olive oil in a pan over medium heat. Add the onion, minced garlic, and chopped mushroom stems. Sauté until the mixture is fragrant and onions are translucent, about 5 minutes.
  4. In a mixing bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, cream cheese, and parsley. Season with salt and pepper to taste. Mix until all ingredients are well combined. Tip: For easier mixing, ensure the cream cheese is softened to room temperature.
  5. Place the mushroom caps on a baking sheet lightly coated with non-stick cooking spray. Spoon the stuffing mixture generously into each mushroom cap, pressing down lightly to pack the filling.
  6. Bake in the preheated oven for 20 minutes until the mushrooms are tender and the stuffing is golden brown on top.
  7. Once done, remove the mushrooms from the oven and let them cool for a few minutes before serving. Tip: Garnish with a little extra parsley for a fresh touch.
