Ingredients
- 12 large white or cremini mushrooms
- 2 tablespoons olive oil
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 4 oz cream cheese, softened
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- Non-stick cooking spray for the baking sheet
Instructions
- Preheat your oven to 375°F (190°C). This ensures that the oven will be hot and ready once your mushrooms are prepared.
- Gently clean the mushrooms with a damp paper towel. Remove the stems from the mushrooms and chop the stems finely. Set the mushroom caps aside on a plate.
- Heat olive oil in a pan over medium heat. Add the onion, minced garlic, and chopped mushroom stems. Sauté until the mixture is fragrant and onions are translucent, about 5 minutes.
- In a mixing bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, cream cheese, and parsley. Season with salt and pepper to taste. Mix until all ingredients are well combined. Tip: For easier mixing, ensure the cream cheese is softened to room temperature.
- Place the mushroom caps on a baking sheet lightly coated with non-stick cooking spray. Spoon the stuffing mixture generously into each mushroom cap, pressing down lightly to pack the filling.
- Bake in the preheated oven for 20 minutes until the mushrooms are tender and the stuffing is golden brown on top.
- Once done, remove the mushrooms from the oven and let them cool for a few minutes before serving. Tip: Garnish with a little extra parsley for a fresh touch.
