Ingredients
- 2 cups masa harina
- 1 1/4 cups warm water
- 1/4 teaspoon salt
- Vegetable oil for frying
- 1 can refried beans (15 oz)
- 1 cup crumbled queso fresco
- 1/2 cup chopped lettuce
- 1/2 cup chopped tomatoes
- 1 avocado, sliced
- 1/4 cup sour cream
- 1/4 cup salsa
- Lime wedges for serving
Instructions
- In a large bowl, combine masa harina and salt. Gradually add warm water while stirring until the dough is firm and springy. It should not be sticky. Add more water or masa harina if needed.
- Divide the dough into 10 equal pieces. Roll each piece into a ball and pat into a flat round about 1/3 inch thick.
- In a large skillet or griddle over medium-high heat, cook each dough circle for about 1-2 minutes on each side until lightly browned and cooked through. Keep them warm under a cloth.
- Using your fingers, pinch the edges of each sope to create a raised border about 1/2 inch high. This will help hold your toppings in place.
- In a deep skillet, heat about 1 inch of vegetable oil to 350°F. Fry sopes in batches for about 1-2 minutes on each side until golden and crispy. Drain on paper towels.
- While the sopes are still warm, spread a thin layer of refried beans on each. Top each with crumbled queso fresco, lettuce, chopped tomatoes, avocado slices, a dollop of sour cream and salsa.
- Serve immediately with lime wedges on the side. Enjoy your homemade sopes!
