Ingredients
- 2 tablespoons vegetable oil
- 1 medium white onion, chopped
- 3 cloves garlic, minced
- 1 medium tomato, chopped
- 1 bell pepper, chopped
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 3 limes, juiced
- 2 bay leaves
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 corn tortillas, cut into strips
- 1/4 cup fresh cilantro, chopped
- 1 lime, sliced for garnish
Instructions
- 1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and garlic; sauté until onion is translucent, about 5 minutes.
- 2. Stir in the chopped tomato and bell pepper, cooking until softened, about 5 more minutes.
- 3. Add the chicken broth, cooked shredded chicken, lime juice, bay leaves, and oregano to the pot. Stir well to combine.
- 4. Bring the mixture to a boil over high heat, then reduce the heat to low and let simmer for 20 minutes. This allows the flavors to meld together.
