Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 1 medium tomato, chopped
  • 1 bell pepper, chopped
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 3 limes, juiced
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 corn tortillas, cut into strips
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, sliced for garnish

Instructions

  1. 1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and garlic; sauté until onion is translucent, about 5 minutes.
  2. 2. Stir in the chopped tomato and bell pepper, cooking until softened, about 5 more minutes.
  3. 3. Add the chicken broth, cooked shredded chicken, lime juice, bay leaves, and oregano to the pot. Stir well to combine.
