Ingredients

  • 2 cups masa harina
  • 1 1/4 cups water
  • 1/2 tsp salt
  • 2 cups vegetable oil for frying
  • 2 cups cooked, shredded chicken
  • 1 tsp achiote paste
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced red onions
  • 1/4 cup pickled jalapeños
  • 1/4 cup fresh cilantro leaves
  • 1 avocado, sliced

Instructions

  1. In a large mixing bowl, combine the masa harina and salt. Gradually add the water while mixing, until you form a dough that is smooth and not sticky. Cover with a damp cloth and let it rest for 10 minutes.
  2. Divide the dough into 12 equal portions. Roll each portion into a ball and flatten it into a disc about 4 inches in diameter.
  3. In a deep skillet, heat vegetable oil over medium-high heat to 350°F. Carefully place the flattened dough pieces in the hot oil. Fry until they puff up and turn golden, about 1-2 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  4. In a medium saucepan, heat olive oil over medium heat. Add the shredded chicken, achiote paste, cumin, garlic powder, black pepper, and salt. Stir and cook until everything is well combined and heated through, about 5 minutes.
  5. Top each fried tortilla with a small handful of shredded lettuce, a generous portion of the seasoned chicken, and a few pieces of diced tomatoes, sliced red onions, pickled jalapeños, cilantro leaves, and avocado slices.
