Ingredients

  • 1 French baguette
  • 2 heads of garlic
  • 3 tablespoons olive oil, divided
  • 4 ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper, to taste
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius).
  2. Slice the top off each head of garlic, exposing the individual cloves. Place each head on a sheet of aluminum foil. Drizzle 1 tablespoon of olive oil over the exposed garlic.
  3. Wrap the garlic in the foil and place the packets on a baking sheet. Roast in the preheated oven for about 20-25 minutes, until the cloves are soft and golden. Tip: Let them cool for a few minutes for easier handling.
  4. While the garlic roasts, slice the baguette into 1/2 inch thick slices, slightly diagonal for longer pieces.
