Ingredients
- 1 French baguette
- 2 heads of garlic
- 3 tablespoons olive oil, divided
- 4 ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper, to taste
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius).
- Slice the top off each head of garlic, exposing the individual cloves. Place each head on a sheet of aluminum foil. Drizzle 1 tablespoon of olive oil over the exposed garlic.
- Wrap the garlic in the foil and place the packets on a baking sheet. Roast in the preheated oven for about 20-25 minutes, until the cloves are soft and golden. Tip: Let them cool for a few minutes for easier handling.
- While the garlic roasts, slice the baguette into 1/2 inch thick slices, slightly diagonal for longer pieces.
- Arrange the bread slices on a baking sheet. Brush them with 1 tablespoon of olive oil and toast them in the oven for about 5 minutes, or until they are golden brown and crispy. Tip: Watch carefully so they don’t burn.
- In a mixing bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, and remaining tablespoon of olive oil. Season with salt and pepper to taste.
