Ingredients
- 8 slices of baguette
- 1 cup ricotta cheese
- 2 medium tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 clove garlic, halved
- Salt to taste
- Black pepper to taste
- Balsamic glaze for drizzling (optional)
Instructions
- Preheat your oven to 375°F. Place the baguette slices on a baking sheet. Brush the tops with 1 tablespoon of olive oil. Bake for 5 minutes or until lightly golden and crisp. Remove from the oven and gently rub each slice with the cut side of the garlic clove for added flavor.
- In a small bowl, combine the ricotta cheese, a pinch of salt, and black pepper to taste. Stir well until smooth and creamy. Tip: For a smoother texture, you can whip the ricotta with a fork or whisk.
- In another bowl, mix the diced tomatoes, chopped basil leaves, the remaining tablespoon of olive oil, a pinch of salt, and black pepper to taste. Gently stir to combine. Allow the mixture to sit for a few minutes to blend the flavors.
- Spread about 1 to 2 tablespoons of the ricotta mixture on each toasted baguette slice. Top with the tomato and basil mixture, ensuring each slice is evenly covered.
- If desired, drizzle a small amount of balsamic glaze over each bruschetta for added sweetness and depth of flavor. Serve immediately to enjoy the crispness of the bread.
