Ingredients
- 1 tablespoon olive oil
- 1/2 pound Mexican chorizo, casing removed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup roasted poblano peppers, sliced
- 2 cups shredded Oaxaca or mozzarella cheese
- 1 tablespoon chopped cilantro
- Salt and pepper to taste
- Tortillas or tortilla chips, for serving
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- In an oven-safe skillet, heat the olive oil over medium heat. A cast-iron skillet is perfect for this recipe, as it retains heat well.
- Add the chorizo to the skillet. Use a wooden spoon to break it into small pieces as it cooks. Cook until it is browned and fully cooked, about 5-7 minutes.
- Add the chopped onion to the skillet. Sauté for 3-4 minutes until it begins to soften.
- Add the minced garlic and sliced roasted poblano peppers. Stir everything well and cook for another 2 minutes.
- Reduce the heat to low and sprinkle the shredded cheese evenly over the chorizo mixture. Stir gently to begin melting the cheese.
- Transfer the skillet to the preheated oven. Bake for about 5-7 minutes or until the cheese is fully melted and bubbly.
- Remove the skillet from the oven using oven mitts, as it will be very hot.
- Garnish the queso fundido with chopped cilantro for a fresh touch and season with salt and pepper to taste.
- Serve immediately with warm tortillas or tortilla chips.
