  • 1/2 pound Mexican chorizo, casing removed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup roasted poblano peppers, sliced
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1 tablespoon chopped cilantro
  • Salt and pepper to taste
  • Tortillas or tortilla chips, for serving

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In an oven-safe skillet, heat the olive oil over medium heat. A cast-iron skillet is perfect for this recipe, as it retains heat well.
  3. Add the chorizo to the skillet. Use a wooden spoon to break it into small pieces as it cooks. Cook until it is browned and fully cooked, about 5-7 minutes.
  4. Add the chopped onion to the skillet. Sauté for 3-4 minutes until it begins to soften.
  5. Add the minced garlic and sliced roasted poblano peppers. Stir everything well and cook for another 2 minutes.
  6. Reduce the heat to low and sprinkle the shredded cheese evenly over the chorizo mixture. Stir gently to begin melting the cheese.
  7. Transfer the skillet to the preheated oven. Bake for about 5-7 minutes or until the cheese is fully melted and bubbly.
  8. Remove the skillet from the oven using oven mitts, as it will be very hot.
  9. Garnish the queso fundido with chopped cilantro for a fresh touch and season with salt and pepper to taste.
