Ingredients

  • 1 pound ground pork
  • 1 cup finely chopped chives
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon minced fresh ginger
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 40 round dumpling wrappers
  • Water for sealing wrappers
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix the ground pork, chives, soy sauce, sesame oil, ginger, garlic, salt, and white pepper until well combined. Use your hands or a spoon to ensure the ingredients are evenly distributed.
  2. Lay a dumpling wrapper on a clean, flat surface. Place 1 teaspoon of the pork mixture into the center of the wrapper.
  3. Dip your finger into a small bowl of water and dampen the edge of the wrapper. Fold the wrapper in half to encase the filling and press the edges together firmly to seal. Optionally, you can pleat the edges for a decorative finish. Repeat with the remaining wrappers and filling.
  4. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Arrange the dumplings in the skillet, ensuring they do not touch each other. Fry until the bottoms are golden brown, about 2-3 minutes.
  5. Add 1/4 cup of water carefully to the skillet and cover immediately with a lid. Steam the dumplings for about 5-6 minutes, or until the water has evaporated and the dumplings are cooked through. Remove the lid and let any residual water cook off, allowing the bottoms to crisp up again if needed.
  6. Remove the dumplings from the skillet and serve warm with your favorite dipping sauce.
