Ingredients
- 8 ounces pasta (such as penne or fusilli)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes, with juice
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions
- Fill a large pot with water and bring it to a boil over high heat. Add a generous pinch of salt to the boiling water.
- Add the pasta to the boiling water and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and chopped onion to the skillet. Sauté for about 3 minutes, or until the onion becomes translucent and fragrant. Be careful not to burn the garlic.
- Stir in the cannellini beans and diced tomatoes with their juice. Add the Italian herbs, salt, and pepper.
- Simmer the mixture for about 10 minutes on low heat, letting the flavors meld together. Stir occasionally.
- Once the pasta is done, drain it in a colander and add it to the skillet with the bean and tomato mixture. Gently stir to combine and heat through for an additional 2-3 minutes.
- Taste and adjust the seasoning with more salt and pepper if needed. For added flavor, you can sprinkle some grated Parmesan on top.
