Ingredients

  • 8 ounces pasta (such as penne or fusilli)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes, with juice
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Fill a large pot with water and bring it to a boil over high heat. Add a generous pinch of salt to the boiling water.
  2. Add the pasta to the boiling water and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and chopped onion to the skillet. Sauté for about 3 minutes, or until the onion becomes translucent and fragrant. Be careful not to burn the garlic.
  5. Stir in the cannellini beans and diced tomatoes with their juice. Add the Italian herbs, salt, and pepper.
  6. Simmer the mixture for about 10 minutes on low heat, letting the flavors meld together. Stir occasionally.
  7. Once the pasta is done, drain it in a colander and add it to the skillet with the bean and tomato mixture. Gently stir to combine and heat through for an additional 2-3 minutes.
  8. Taste and adjust the seasoning with more salt and pepper if needed. For added flavor, you can sprinkle some grated Parmesan on top.
