Ingredients
- 1 pound fresh anchovies, cleaned
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil
- 1 lemon, cut into wedges
Instructions
- Rinse the anchovies under cold water and pat them dry with paper towels. Ensuring they are dry will help achieve a crispy texture.
- In a mixing bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper. Mix well to ensure even seasoning.
- Heat a large non-stick frying pan over medium-high heat. Add the olive oil and let it heat until it shimmers but is not smoking, around 350°F.
- Dredge the anchovies in the flour mixture, covering them completely, and shake off any excess flour.
- Working in batches to avoid overcrowding, carefully add the dredged anchovies to the pan. Fry each side for about 2-3 minutes, or until golden brown and crispy.
- Using tongs, remove the fried anchovies and place them on a plate lined with paper towels to drain excess oil.
- Serve hot with lemon wedges on the side for squeezing. Enjoy your crispy pan-fried anchovies as a delightful appetizer!
