Ingredients

  • 1 pound fresh anchovies, cleaned
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 1 lemon, cut into wedges

Instructions

  1. Rinse the anchovies under cold water and pat them dry with paper towels. Ensuring they are dry will help achieve a crispy texture.
  2. In a mixing bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper. Mix well to ensure even seasoning.
  3. Heat a large non-stick frying pan over medium-high heat. Add the olive oil and let it heat until it shimmers but is not smoking, around 350°F.
  4. Dredge the anchovies in the flour mixture, covering them completely, and shake off any excess flour.
  5. Working in batches to avoid overcrowding, carefully add the dredged anchovies to the pan. Fry each side for about 2-3 minutes, or until golden brown and crispy.
  6. Using tongs, remove the fried anchovies and place them on a plate lined with paper towels to drain excess oil.
